Tropical poblano peppers with shrimp

Yes, it has been awhile since I have published a recipe. True I have cooked, just forgotten to share with everyone. I have a couple of great ones too. It is not often I randomly shop without a purpose for a meal. The poblanos looked wonderful at the market so I was compelled to purchase two hoping to come up with a stuffing. Of course there is a time frame involved…., if I don’t come up with something fairly soon they will spoil and that is a waste. Planning meals ahead for the week is just something I do, trying to maximize potential left overs etc. Rotating what we have in the freezer is a priority too, things can get lost in there. So, I found some nice fish and decided on fish tacos, and an older bag of gulf shrimp, that really needed to be used. Now this old brain went to work and this is what I came up with. Chicken pot pie

The weather is getting colder and things you would never eat in the summer become a fixation, chicken and dumplings, pot roast, and of course chicken pot pie. You can prep this the day before and bake the next day. It is a dish packed with flavor and good stuff. The trick for this pie is chopping everything into small pieces. The chicken can be chopped into large bitesize pieces. You can use roll out dough or make your own pie crust. I make the chicken kale gravy to top it with….see previous post.  Pie crust you need a top and bottom  1 cup frozen peas 2 carrots 1 potato 2 celery 1/2 large onion 2 chicken boobs (no skin or bones) 1/2 cup sherry (optional, but taste better with it) 1 tablespoon flour 1 cup chicken stock or broth ( or the entire can)  Teaspoon salt Pepper….. Northwest chicken with green chile sauce with roasted vegetables

Another experiment hits the oh my zone! Super easy recipe, the vegetables take a little prep time other wise great tasting, easy, healthy meal. This was enough for three servings and a lunch.  4 Chicken boobs halves pounded a little to speed up cooking Tablespoon olive oil Penzeys northwoods seasoning 1 can cream of chicken soup 1/2 can chicken broth 4 green chiles roasted, peeled, seeded and chopped or…..canned….or frozen about 1/2 cup 2 beets, peeled, cut into cubes 1/2 head cauliflower cut into florets  1 large sweet potato peeled cup into cubes Garlic salt More olive oil Start prepping the vegetables first. Heat oven to 425. I keep them separate otherwise you will have red cauliflower and sweet potatoes. Spray or spread some olive oil in a 13×9 pan. In a bowl place cubed sweet potatoes toss with a small amount of olive oil and garlic salt. Put cauliflower in bowl toss with olive oil and garlic salt or your favorite seasoning, do the same with cubes beets. Put in hot oven and bake …
