Green chile and chicken casserole 

The garden is doing magnificent this year. Which, for a change, includes the pepper/chile patch. Our Big Jims and banana chiles are producing enough so I can pick four to five a week. Jalapeños,  habanero and chipotles are coming along too. I roast them all then find something to make with them, or just eat them on the side with a dish. But yesterday, I am really snooping around the Big Jim plant and find three more trophy chiles. So, now I have a good amount to do something with…..it is hot, so slaving in the kitchen it not my idea of fun. Also, it seems like we are eating very late these days because of the heat and long sunny days. Trying to head outside in the evening to accomplish all the chores for the day while it is cooler. Mexican kale

LouAnn this is for you. 😜 this lady is always telling me how much she dislikes kale. However I think if she gave this recipe a try she could have a different take on this green leafy vegetable. When you have a bunch of something being creative is a challenge. We were having tacos and I wanted to use some more of the wonderful kale we had purchased the other day. I do have to say it was pretty tasty.  5-6 clean kale leaves, stems removed and chopped 1 can drained whole kernel corn 4 hatch chiles roasted, skinned and chopped or one small can ( about 1/2 cup ) 1 cup grated jack cheese plus a little more to sprinkle on top (about a handful) 1/2 teaspoon cumin 1/4 teaspoon garlic salt 1 large tablespoon finely chopped onion (optional) Heat oven to 350. Northwest chicken with green chile sauce with roasted vegetables

Another experiment hits the oh my zone! Super easy recipe, the vegetables take a little prep time other wise great tasting, easy, healthy meal. This was enough for three servings and a lunch.  4 Chicken boobs halves pounded a little to speed up cooking Tablespoon olive oil Penzeys northwoods seasoning 1 can cream of chicken soup 1/2 can chicken broth 4 green chiles roasted, peeled, seeded and chopped or…..canned….or frozen about 1/2 cup 2 beets, peeled, cut into cubes 1/2 head cauliflower cut into florets  1 large sweet potato peeled cup into cubes Garlic salt More olive oil Start prepping the vegetables first. Heat oven to 425. I keep them separate otherwise you will have red cauliflower and sweet potatoes. Spray or spread some olive oil in a 13×9 pan. In a bowl place cubed sweet potatoes toss with a small amount of olive oil and garlic salt. Put cauliflower in bowl toss with olive oil and garlic salt or your favorite seasoning, do the same with cubes beets. Put in hot oven and bake …

Green chile venison round two

Earlier I posted a version of green chile venison. I changed up this batch and we think this one is better than before. A bit more robust in flavors…..truthfully you can not stop eating it.  Crock pot 1 can beef broth 1/2 onion 1 teaspoon ancho chile powder 1 teaspoon chipotle powder 1 tablespoon oil plus one more tablespoon Some salt 1 clove garlic smashed or chopped 10 hatch chiles……roasted, peeled and diced…..or canned chiles would work too.  Venison roast…..I use a hunk of shoulder or hindquarters for this Garlic salt Heat skillet and add 1 tablespoon of oil, quickly brown meat on all sides, during browning sprinkle some garlic salt on the meat, not too much though. While doing this add broth to crock pot, garlic and spices….stir. After meat is seared add meat to crock pot, mix a bit, then add oil, onion and chiles, roll everything so some chiles and onion stay on top and the rest are mixed in. Green chile chicken and blue corn dumplings

Yep, I am a chile head…..and since coming home from Hatch my brain is going crazy with ideas on using fresh green chile and the blue corn flour we bought. I love to use leftovers…..so, I had left over chicken I had froze before we left and some game hens from the trip. I want to include both fresh and a leftover way to cook this dish. The fresh way is just a basic chicken and dumpling recipe. Nothing special. Leftovers Chicken or game hens some meat left on the bones, set aside big hunks of meat for later Three celery stalks chopped Three carrots chopped 1/2 onion chopped 1 can chicken broth Some water Five green chiles roasted and peeled then chopped Salt to taste Put the bird bones in a stew pot with broth and water, enough water to almost cover the bird. Add one carrot, one celery and half of the onion. Cook for several hours on a simmer until the bones are soft. Break the bones up a bit and cook …
