BUTTER MILK PIE!

This might sound strange but it is very good. We like it plain or during the summer putting fresh fruit like, peaches, blueberries and strawberries on top. Hope you enjoy. BUTTERMILK PIE  1/2 CUP (1 SLICK) MELTED BUTTER 1 3/4 CUP SUGAR (you can cut back on the sugar to 1 1/4 cup) 3 TABLESPOONS ALL PURPOSE FLOUR 3 EGGS BEATEN 1 CUP BUTTERMILK 1 TEASPOON VANILLA EXTRACT (I use 2 teaspoons) 1/4-1/2 TEASPOON GROUND NUTMEG     (I USE 1/4) 1/4 TEASPOON SALT 1 UNBAKED 9 INCH DEEP-DISH PIE CRUST PREHEAT OVEN TO 350F COMBINE BUTTER, SUGAR, FLOUR, EGGS, BUTTERMILK VANILLA, NUTMEG AND SALT IN A LARGE BOWL; WHISK UNTIL SMOOTH. POUR INTO PIE CRUST. BAKE 45-50 MINUTES UNTIL GOLDEN BROWN AND WOODEN TOOTHPICK INSERTED IN THE CENTER COMES OUT CLEAN. COOL COMPLETELY ON WIRE RACK THEN REFRIGERATE. And eat…..

The perils of living in a rural area

Just to let you know it has finally stopped snowing and the sun is out…..Nothing makes me more happy than a sunny sky. We still have ice so not much traveling around town will be done today. So….it is time to post, something…..right? This is my peril…..I am on satellite service and when you “upload” too much they slow your data speed way down to almost nothing. I have had trouble the last few days with posting, looking or doing anything on the net. A call to tech support reveals I have exceeded my limit. Rats is all I can say. So I now am going to still post recipes but not as many photos. Maybe just a final dish or non at all. This makes me have a sad face 😦 because the food looks so good on the plate and I love to share.  Hopefully I will find a balance and make it all work out. Enjoy your day….spring is almost here!

Green eggs no ham

Watching your waist line or need something full of vitamins, fiber and energy? Then this fast breakfast is for you. This is the one person version. Spinach (a handful) egg(s) Olive oil (drops) I use non stick spray on my favorite little skillet. A non stick pan would do nicely too. Add a small handful of spinach, We grow curly leaf but bagged spinach works great. While spinach is wilting add a couple drops (about 6) of good olive oil. This helps the spinach release its vitamins and is good for you. Add your egg or eggs to the same pan. Cook to your desired egg doneness. And eat…… FYI: Spinach loves to grow in the winter, now with that being said if you are on the East Coast….you might have to buy it, or try growing it in a window, I don’t know it might work. As spinach grows, pick or trim with scissors. It will continue to grow until the weather heats up and it bolts. To save spinach for future use: Wash, …
