This was a dish I threw together one night and it has been a family hit for years. Easy, tasty and low in calories. John likes it with some kind of noodle side dish….I just eat it as is. Everything depends on how many you feed. This recipe will do three very well and four with less portion size.
- 1 package turkey cutlets
- 16 oz tomato sauce or two 8 oz cans
- 1 cup grated cheddar cheese
- 4 green onions cleaned and chopped…even the green part
- Italian seasoning maybe a teaspoon more if you want
- Garlic salt
- Olive oil
- 8×8 pan non stick spray
- Oven 350
Okay since everything has WATER ADDED I have to change things up. It makes me really mad trying to brown something and it sweats. So…….in a flat pan….a grill pan would be better….heat up and put a coating of olive oil in it. You want this pan hot….because of the sweating of meat. Lightly sprinkle garlic salt on the cutlets, place in pan and brown as fast as you can. Once the meat sweats it will not brown. A grill pan helps this from not happening. I think I said that already……while the turkey is browning in another small sauce pan put tomato sauce in, add Italian herbs…no salt! And I mean no salt added! Heat on low to medium heat. This makes the herbs flavor the sauce as it heats. Grate cheese and cut green onions.
The cutlets do not take too long….if you cook them a bit it is okay. Once they done place them in the 8×8 pan scraping the brown stuff on top…if you need to deglaze the pan a little bit that is good. However, with the meat sweat you might not need too. Then take the seasoned tomato sauce and pour over the top coating the cutlets. Sprinkle the cheese evenly over the sauce and top with green onions. Bake for 30 minutes at 350. The sauce should be bubbly and start to brown the cheese on the top. That’s it……the reason I stress no salt is the tomato sauce has salt….cheese has salt….if you add salt you will not like it….trust me on this.
Some of the sides are garlic noodles, butter noodles, rice, spaghetti squash, bread….etc.
low cal…..use a small amount of cheese and spaghetti squash as pasta.
As always we hope you enjoy.
