Short ribs and sauerkraut (burn ban dinner)

Love short ribs….love sauerkraut…. never had them together? Well, they are an amazing group of flavors….and this is an easy dish everyone will love.


short ribs (depends on how many folks) for 2 we use two packages of  4 ribs because we like leftovers

3 cans of sauerkraut or one large jar including the liquid (cheap brand works great)

a crockpot

some oil and a fry pan

Heat fry pan, add oil and brown short ribs quickly, turning so all sides are seared. Place in crockpot, pour entire contents of kraut over short ribs, stir or fold ribs into the kraut. Not a lot just a bit. Cook on low all day, or high for a few hours then lower to low if you need it sooner.

This dish can also be done in the oven, cook for at least two hours at 350; a dutch oven works good. Or on the stove top at medium heat for 4 hours. The meat should fall off the rib bone when done.

The flavors of the kraut and beef become a hearty dish. We pretty much just eat this for the meal.
