This was a throw together meal that turned out fantastic!
1 can cream of chicken soup
1 can chicken broth
chicken boobs, skin and rib kind, seasoned with 1 tablespoon fajita seasoning
yellow squash sliced, 1 can hominy drained, 2 carrots sliced
whole chiles: medium in heat. I used 6 medium size chiles
oil to fry chicken in, about 1/2 inch deep in the large skillet
fajita seasoning (2 tablespoons approximately)
Tortillas corn sliced into 1 inch strips
In a sauce pan add soup, broth, carrots, squash plus 2 teaspoons of fajita seasoning. Cook over medium heat. Heat large skillet pan add oil then seasoned chicken boobs and fry. No flour! Cook with lid on, chicken should be brown but not all the way done. Remove chicken, add whole chiles and chopped onion. Stir around until onions are brown and chiles are soft. Remove from pan. Add corn tortillas strips and fry until crisp. remove from pan, pour off excess oil. Add chicken broth mixture to skillet, add hominy. It will sizzle. If desired add the rest of the fajita seasoning. Place chicken back into the skillet, kind of bury it in the sauce, add chiles and onion on top. Cover and cook 20 minutes. Serve with the tortilla strips along side of the chicken mixture.
